Bacon and Mozzarella Gnocchi Bake 🍽
Hello! Today I made a gnocchi bake with bacon, mozzarella, peas, corn and pesto. Gnocchi bakes are one of my favourite foods. They are INCREDIBLY simple and easy to make, but absolutely delicious.
Personally, I think they are one of the best meals – they are perfect if you’re not the best chef, you just need a quick and easy meal, or because you want some comforting food.
Here is a recipe for the one I made today, but they vary every time I make them. You can substitute pretty much any of the ingredients.
Bacon, Mozzarella & Pesto Gnocchi Bake
Ingredients:
- Gnocchi
- Diced Pancetta
- Peas (optional)
- Corn (optional)
- Any veg you think will work (optional)
- Crème fraiche
- Pesto (optional)
- Mozzarella
Method:
- Preheat the oven to 200°c / 180°c fan. Put some gnocchi* in a roasting tin. Add peas, corn and any other veg you have chosen.
- Add the pancetta, pesto and crème fraiche and stir. It will probably be quite hard to mix, so maybe use two spoons.
- Add some mozzarella to the top. Spread it out so it isn’t just in one place. It doesn’t have to cover the whole thing, though, it will melt and spread out.
- Put the tin in the oven for twenty minutes. When you take it out, the cheese should be crispy and golden on top.

* There isn’t really a specific amount for any of the ingredients. This may seem really unhelpful but it honestly depends on how many people you are cooking for and how hungry you are.
