Flatbreads!


Today I made flatbreads for the first time! The dough was very easy to make.

I also made chargrilled lamb with raisins and pine nuts. Then I put it on the flatbread with yogurt.

Flatbread Pizzas.  (serves 2. May have leftover sauce).

Ingredients:

Flatbreads (cooked)

Tomato sauce (see below pizza recipe)

Mozzarella and any other toppings that you like (or just mozzarella)

Preheat your oven to 200/180 fan. Put about 2 tbsp of sauce on each flatbread, leaving some space at the edge for crust. Put your toppings on (if using) and then rip up your mozzarella into small pieces. Put it in the oven until it is golden and the cheese is bubbling.

Traditional tomato sauce (very simple!)

If you love simple food that tastes delicious, this is a really easy recipe for tomato sauce that you can make in minutes!

Ingredients:

About 300ml passata

1 tsp dried oregano

A few basil leaves

Salt

Mixed peppercorns (or black pepper)

Put your passata and oregano in a bowl with a good grind of pepper and a pinch of salt. Then rip up your basil and  put that in too. Give it a good mix, and there you go! This is probably simplest tomato sauce you will ever make.

Lots of veg tomato sauce!

This is perfect if you feel like you need to eat more veg. It takes a bit longer than the traditional one, but the taste is amazing. If you don’t use it all, it is also delicious with pasta (or you can freeze it).

Ingredients:

Olive oil

Onion

Red Pepper

Aubergine

Courgette

Basil

Thyme

Oregano

Salt

Mixed or black pepper

Tinned chopped tomatoes (400g)

1/2 tbsp tomato ketchup

Put some olive oil in a saucepan that is over a medium heat. When the oil is hot, put your chopped onion in. when the onions are cooked through, put your red pepper in for a couple of minutes and then add the aubergine and courgette. Then add the chopped tined tomatoes and ketchup. give it a stir and then add the thyme, oregano, salt and pepper. Put a lid on and leave it for 20 minutes so it can cook and get softer. Then take the lid of and put in a few pieces of basil and then blitz it with a stick blender until it has turned into a sauce.
